Aroma_____ ⚅__________⚄
There is a prodigious dry aroma from the coffee grinds that resembles panela, which conceals secondary notes of red apples, and juicy fruit. On the nose, the drink is evocative of red apple skins and raw and unrefined brown sugars.
Acidity ____ ⚁__________⚂
While exceedingly mild, there is just a tangy tint of residual acidity toward the end of profile.
However, in face of the brimming sweetness, this lack of acidity goes almost unnoticed.
Sweetness ⚅__________⚅
This coffee has an unbounded sweetness with tasting notes of apples mixed in with apricots. Raw notes of unrefined sugar follow after the juicy sweetness has settled, tasting of caramel and earthy molasses at the base of the tongue.
Body _____ ⚄__________⚅
Body is dense in nature, and sustains the profile of a rotund sweetness of apples while being able to bring forth the caramel-like textures of panela. Mouthfeel is like wine-like, smooth.
Finish_____ ⚅__________⚄
A long finish that encapsulates the sweetness of the drink, leaving a clean aftertaste that brings forth the notion of apple juice. Light, aromatic notes of molasses round off the finish.
Notes
Panela, an unrefined cane sugar from South America, ties the drink together with its molasses and caramel characteristics that is present through from brew till finish.
The drink starts off ambrosian and robust, but evolves into a lighter, tea-like profile as it loses heat, tapering off into a clean sweet apple finish.
Sweetness takes centre stage in this drink - it is resplendent and sonorous, both clear, and full at the same time. There is also a noticeably limited acidity. In light of its brimming sweetness, however, this lack thereof can instead be thought of as harmonizing in nature.
