Aroma_____ ⚅_________ ⚄
This coffee has a unique aroma that is highly intense.
It brings notes of rose ispahan and a pungent lingering honeysuckle afternote.
Acidity ____ ⚄_________ ⚅
Light, raspberry-like acidity when hot that grows in prominence as the drink cools down, forming a balanced yet bright finish of sparkly phosphoric acid, with clean notes very reminiscent of the finish of champagne.
Sweetness ⚄_________ ⚅
Long lasting sweetness lingers as a gentle rose lychee note in the mouth.
As the drink cools down, notes of raspberries feature prominently on the front of the profile.
Body _____ ⚄_________ ⚅
Surprisingly, the body is rich and brown, with a noticeable viscosity.
This keeps true from hot to cold, and makes for a good body throughout the drink.
Finish_____ ⚅_________ ⚅
Straightforward long finish resembling strawberries and cream, and continues to carry for a very long time. At its end, the coffee cools into a beautiful rose-like finish.
Notes
This is an interesting coffee which I find a little challenging to brew. A little too much and the finish comes off dry, while insufficient extraction brings out a less than prominent flavour profile. My recipe called for 93°C water split over four pours, and when brewed right, this coffee actually gave me very rose lychee, ispahan notes combined with the raspberry and champagne flavours as indicated.
It has a unique complexity and smoothness, and I greatly enjoy this coffee for its agreeable and really lasting flavours. As with Laurina varietals, it is often easy to drink, and this experimental process from Daterra actually helps to bring out the inherent redder notes in the coffee such as rose florals and raspberries.
