The second sake i write about is also from the same brewery as before, but this time it features the Yamada Nishiki in its finest form.


This bottle is a '3-Grain' category sake from Ohmine Shuzou, polished to a 50% polishing ratio and above, of outstanding quality. Muroka Nama Genshu means to be not charcoal filtered (無濾過), unpasteurised (生), and undiluted( 原酒), which runs contrary to most sakes which are pasteurised twice, once after filtering and once after diluting. Muroka sakes are generally fuller and at times rougher in texture, while Nama Genshu brings richer and stronger taste for the lack of dilution, or cutting, with other liquids.


Like the bottles I have had from Ohmine Shuzou before, this sake features the same comfortable sweetness and easy drinkability that I love about the brewery's sakes - they perform admirably both with food pairings, and on its own.


Deliciously creamy, with a rich sweetness of melons and a bit of mint, and minerality. It seamlessly blends together with a slight hint of umami in a medium body and a deceptively easy 14.5% ABV.
