Aroma_____ ⚅__________⚅
A complex, rich aroma of chocolates and raisins emanate from the cup immediately upon brewing that continues throughout the entire cup experience.
Acidity ____ ⚂__________⚄
Gentle, apple-like acidity that is not the standout feature of the cup, but rather a way to introduce into the complex sweetness of the coffee.
Sweetness ⚅__________⚅
Sweetness of Sake and Koji are prominent and textured in feeling.
Body _____ ⚅__________⚅
Actually an excellent body that is filled out with 70% dark chocolates.
Finish_____ ⚄__________⚄
Intensity of finish is present, but a step down from the body. Grape like notes come out alongside chocolate that coats the tongue throughout.
Notes
I had the fortune to be able to brew and drink this lot of Symmetry V3 from Iris Estate, a farm which places emphasis on terrior based processing. This lot was specially selected with double floatation using cherries with a Brix sweetness measurement of 20-22, and fermented in a sealed tank before being dried at Finca Deborah for 20-25 days, to achieve a target moisture content of 10-12%.
Generally, having a consistent moisture content allows for controlled and even roasting, and limited involvement in the fermentation process carries forward some of the delicate acidity and notes from the Iris Estate terrior. I however really loved the body on this coffee, and how despite a prominent body, it also encapsulates the complexity of flavour to make for a rich and decadent coffee experience.
Leaves Coffee Roasters are also one of my favourite roasters, and I greatly appreciate having well roasted premium coffees from a reliable source that also makes wonderfully accurate tasting notes.
