Aroma_____ __________

Red berries, with clear notes of vanilla and elderflower.

Distinctively port-like sweet aroma when in cup.

Acidity ____ __________

A prevalent starfruit acidity that is clean and delicate, and wraps off nicely without being overly lingering note, or abruptly short.

Sweetness __________

Cherry cola like with a syrupy richness. While slightly tart in taste, it blends well with the body for a wonderfully balanced brightness and sweetness.

Body _____ __________

With the added HGD process, the beans are categorically darker, and produce a good depth of body, allowing the dark ripe cherry notes to flourish.

Finish_____ __________

The finish here is instead capped off with some darker notes brought out that leave a minty, chocolate aftertaste that lingers in the nose and mouth.

Notes

This is surprisingly one of the best beans I have had in a while. Rich, with a good body and sweet with cherry notes, the coffee brewed exemplifies a pleasantly acidic coffee with a very well developed sweetness that is mellow and resounding.


Subjecting to HGD, one would imagine that the roasted notes could overwhelm the potential flavors in the coffee. However, in this case, at between 1~2 minutes, it was just about perfect from its starting point.


Today, I learned that just as each person's interpretation of coffee varies widely, the techniques behind getting a wonderful cup can also differ across a broad spectrum.
