Aroma_____ __________

Berries, ripe red fruits with hints of white florals, the aroma is solid and homogeneous.

Acidity ____ __________

Orange fruits and grapes, this coffee has a simple tartaric acidity, light and clean.

Sweetness __________

Sweetness the intensity of simple syrup is followed by notes of oranges and orange peel.

Body _____ __________

The body is round and smooth, and has a medium-rich texture that glides down the throat.

Finish_____ __________

Segmented into an initial strong finish semi-bitter note of dried oranges that sits on the back of the tongue before a buttery, waxy, clean finish appears.

Notes

While a fantastic coffee that belies its initial impression, this coffee is a hard one to master.

What worked for me was a finer than usual coffee ground (42 clicks on my Comandante Red Clix), at a 1:15 ratio with 94°C water on an Origami dripper with Kalita filter paper, poured very slowly over 5 pours.


This helped to utilise immersion for the extraction, where both the its amazing unusually layered complexity, as well as the clean sweetness and intensity, can come together in the same brew.
