_________Intensity____Quality
Aroma_____ ⚄__________⚄
An airy musk of bloomy rind cheese crowds the nose together with an aroma reminiscent of the honey-like juiciness from the flesh of dried figs.
Acidity ____ ⚅__________⚅
Sprightly acidity that peaks up at the middle, filled with kaffir limes and shades of strawberry sour.
Sweetness ⚄__________⚃
A juicy strawberry sweetness that parts into lingering notes of blueberries. The intensity feels more carried by the vibrant acidity than by the sweetness itself.
Body _____ ⚅__________⚅
Body is medium, intense in nature. Slightly umami, the flavors are intense and strong, and with the hint of dark bitterness from the roast, it is a well measured and balanced body.
Finish_____ ⚅__________⚃
Notes of milk chocolate, and a cacao aftertaste that feels slightly drawn out. It is accompanied by piquant whiffs of what resembles goat cheese that form on the nose.
Notes
This coffee is intriguingly multifarious, being able to contain many differing aspects of taste - from its memorable piercing aroma, bright acidity, to a sweet juiciness with a distinct strawberry with floral bits of blueberries, together with the typical aspects of Indonesian coffees - a somewhat bitter and umami body, and an chocolate, earthen finish.
Generally, as the drink cools, it loses most of the aromatic compounds that give rise to the impression of the bloomy rind cheese. In its stead, is a clear, blueberry like sweetness.
I like this coffee pleasantly for its bright and palatable acidity, together with its unique aroma that is consistent with the afternotes on the nose - a faint, bloomy rind cheese aroma that intertwines with the general profile of the coffee.
