Floral hints, reminiscent of potpourri are identifiable, albeit a little masked by a more familiar berry aroma that endures from its dry fragrance.

Acidity ____ __________

Very mild acidity that seems to have a stimulating effect on the taste buds.

Subtlety pairs well with the generally lighter and more delicate flavor notes.

Sweetness __________

A clean stone fruit-like sweetness is presented in this cup of coffee. Due to the clean, almost crisp sweetness, it leans towards being identified to have white peach flavor notes.

Body _____ __________

The coffee is soft and smooth, and seems to be evenly balanced in mouth feel.

Finish_____ __________

Sweetness in the middle of the coffee flavor profile gives way to a lasting floral finish.


Notes

The unique method of processing the cherries on a single layered bed was done with the intention of a cleaner taste, and successfully so - the result is a clear tasting cup of coffee.

It felt like with the cleanness was also accompanied by a slightly more subdued flavor profile.


Complex and clean stone fruit flavors predominate the coffee, with a continuation of powdered floral notes that may come as an afterthought, often towards the finish.
