Aroma_____ ⚅__________⚅
Honey peaches and white flowers come to the fore when assessing the aroma. It is firm, and distinctive.
Acidity ____ ⚃__________⚅
Gentle on the intensity, the acidity is not tart, but rather smooth on the mouth.
Predominantly tartaric and malic in nature, it is nice and balanced and blends well into the profile of the coffee.
Sweetness ⚅__________⚅
The drink has sweetness of mangoes, represented by the rich notes that come out towards the end of the profile, lingering in the mouth.
Body _____ ⚃__________⚅
Good medium bodied notes that tie up the profile together without which the coffee might feel a little too brief. This coffee is sure to be very dense, and more heat is required to roast through to the middle, which explains the roast level.
Finish_____ ⚃__________⚄
Lingering faint finish of florals reminiscent of a classic washed coffee.
Notes
It has always been difficult to lay hands on coffee from Finca Takesi in Bolivia. Reknown as the farm with the highest elevation at which coffees are cultivated, contributing to the denseness of the coffee as well as its intensity of flavours. Not many roasters can lay claim to being able to procure coffee greens from this farm - Monogram and Coffee Collective are two big roasters that come to mind when I think of this coffee.
It is in this backdrop that I am extremely excited to be able to drink this coffee! And of course, it does not fail to impress. Behind the facade of a conventional washed Ethiopian coffee, it holds a unique and dense sweetness and an exquisite balance that just glides over the mouth, leaving an empty cup in a matter of minutes.
